Barrel-aged wild Italian Grape Ale spontaneously fermented with 100% Grechetto Gentile (Pignoletto) white wine grapes from the biodynamic winemaker Gradizzolo.
Skin contact, barrel-aged for 7 months with Brettanomyces Lambicus.
The result is an amber coloured beer, with floral aromas, ripe yellow fruit and elegant oxidation notes. The sinuous body is thickened by the tannins and rounded by the oak character, with accentuated dryness.
Evolving product suitable for aging.
The name chosen for the entire Italian Grape Ale style project is Û, meaning "grape" in the Bolognese dialect. The project consists of two limited edition beers: this one with red grapes were used and its sister Û baccabianca with white wine grapes.
The idea was immediately clear: to work with natural winemakers whose genuineness of the wines Ca' del Brado appreciated, who embraced the philosophy of indigenous yeasts (viscerally linked to a specific grape and a specific place) and cultivated vineyards historically rooted in the territory.
