Blend of grisettes, partly barrel-aged, refermented on apricot lees from a previous beer (Nil Blanc), and on 200g/L of fresh mirabelle plums.
It's a dry and thirst-quenching beer with a generous dose of fruit, with the pits of both fruits bringing an almond-like softness that adds to the general "gourmandise" of the beer.
This beer is a tribute to the brewer's grandfather, who taught him the love of handmade things as well as the love of mirabelle plums:
"This beer with mirabelle plums and apricots is a tribute to my grandfather, who always said goodbye to us with a little "adieu gamin!" ("farewell kiddo").
Year after year, he embodied a lot of values that became central for me, starting with the love of things done yourself and working with your hands, be that in the garden with the fruits and potatoes, distilling pears, or at the factory where he worked.
He also gave me his love for mountains, foraging mushrooms and plants, and of course, his love for the mirabelle plums from the garden! Used in a pie, in jam, in alcohol... and now in beer."
