A mixed-fermentation 4.8% British-style Stock Pale Ale with Brettanomyces claussenii yeast, dry-hopped with EKG, Cascade and Chinook, then aged in gin barrels for one year.
In the great tradition of British brewing, in the 19th century Stock Ales were beers refined in barrels for with brettanomyces for months or years. The term Brettanomyces itself appeared at the end of that century, and literally means "british fungus", speaking volumes about the omnipresence of Brett in British beers.
Directly inspired by the ales of that era, Angel Gone is a Stock Pale Ale brewed with heirloom Chevallier malt (UK) and hopped generously with East Kent Goldings in the boil.
It was then fermented with a British ale yeast and Brett claussenii, before spending a year in a former gin barrel, including a 6 months long dry-hop with East Kent Goldings and French-grown Cascade and Chinook.
The end result is a dry and bitter Pale Ale, with the typical fruity funk of brett claussenii interacting with hops for a long period.
A dry, bitter and funky ale, balanced by a resolutely hoppy finish.
