A barrel-aged mixed-fermentation sour ale with forest blueberries and basil.

This mixed-fermentation sour ale fermented for 14 months in a foeder, where it developed its unique characteristics and character. The addition of freshly picked Polish forest berries into the fermentation over four months brought a fruity note and intensity to the beer.

Just before bottling, Stu Mostow wanted to emphasise the character of this beer even more, so they infused it with fresh basil.

After bottling, the beer went through a refermentation process in the bottle for 3 months, which gave it unique and complex flavours.
