After spending a few days in France recently, the folks at Revel were inspired to break out of their 'totally dry, zero residual sugar’ sandbox, to try and make a cider in the French style.
Meet Reinette du Canada. Made exclusively from Reinette Russet apples, which are the most popular russet variety in France, discovered in Normandy in 1770.
There’s a funny Canadian connection to this apple—it also goes by the name ‘Reinette du Canada’. So it felt extra fitting for them, and for us.
Revel put the cider in a cold tank before fermentation had finished, to ensure they hung on to some of the natural sweetness of the apples.
It’s an incredibly special blend, not only because it’s the first sweet (off-dry I suppose) cider they’ve made in nearly a decade.
The cider itself is rich, concentrated apple notes and bright malic acidity, all balanced with a flash of apple sugar. It’s absolutely gorgeous.
