Bumper is a wild-fermented, hand-disgorged pét-nat cider made in collaboration with Revel's friends at Not Far From The Tree (NFFTT).

Champagne-like bubbles are the first thing you'll notice, lifting aromas of guava, papaya and orchard leaves out of the glass. Bumper reminds me of French cidre, without the sugar.

NFFTT rescues fruit from forgotten urban plantings in Toronto. Faced with a bumper crop in 2021, they asked Revel if they could use a few of their heritage apples. Of course they said yes.

The apples in Bumper were picked over multiple weeks from heritage museums and private homes across Toronto. After letting it wild ferment, Revel bottled it as a pét nat and let it age in glass for 11 months.

Finally, almost a year later, they have hand-disgorged each bottle to remove the sediment.
