Estrella is Revel's take on the Spanish Sidra they fell in love with in San Sebastian.

It has a soft lactic character, savoury funk, bright salinity and a touch of tannin. This combination of fruit, malolactic fermentation and minerality - all derived from non-selected microflora and high acid apples - is reminiscent of Revel's favourite Sidras.

Tart, refreshing and ethereal.

It's still (not sparkling) and meant to be poured from a height, as is traditional in northern Spain. Pouring from a height volatizes aromatics and softens mouthfeel, enhancing the fruit character and rounding out the entire drinking experience.
