This beer was inspired by the famous "bières de coupage" found in such beloved breweries as Brasserie de la Senne or Brasserie De Ranke.
It is based on the same principle as these classic blends that usually offer a high proportion of young, fresh beer, and a small part of lambic or aged sour ale. Here it perfectly showcases its base of a young hoppy saison and our program of barrel-aged sour beer at the same time.
Everything starts with a properly bitter and hoppy saison, brewed with German Hallertau Mittelfrüh, and fermented with a blend of Le Soupir's favourite saison strains.
This base was then carefully blended with a small part of sour wild ale from their oldest and most complex barrel.
The result is an elegant, well-balanced beer that is dry and deliciously thirst-quenching, with a touch of funk and a slight sourness that will develop with age.
