This bretted, barrel-aged India Pale Ale is a new interpretation of the IPAs of yore that were barrel-aged with long dry-hops!

It was brewed with a hefty dose of rye malt, and intensely hopped on the hot side with Comet (FR) and Hallertau Blanc (DE) to reach around 75 IBUs.

It was then dry-hopped straight in the barrel with Chinook (FR), Comet (FR) and Hallertau Blanc (DE) during the entire 8 months of its barrel-aging with brett and bacteria from Le Soupir's old gin barrel.

The result is a rustic, funky and tart beer, extremely fruity with a good hop kick and dry and bitter finish.
