A blend of barrel-aged saisons refermented with Elephant Heart plums.

A saison base brewed with undermodified barley and a touch of rye. The wort co-fermented in a fruiting barrel with 150lbs of Elephant Heart plums from the 2021 season grown in the Similkameen Valley by Snowy Mountain Farm.

The plums underwent carbonic maceration in the barrel for a week and began fermentation from the wild yeast present on the skins before the wort was added. A mixed culture was added to finish the fermentation.
