On the palate, a lively effervescence, carried by fresh acidity of green apple and crisp pear, gradually rounding into a soft, creamy texture that feels both accessible and refined.

Guided by time and the rhythm of the seasons, Boerenerf lambics mature slowly in wood, allowing each batch to develop its own character.

They carefully blend young lambics for freshness and vitality with older lambics for depth, structure, and aromatic finesse. The blends then age patiently in oak casks, where balance gradually emerges between fine acidity, dry character, and subtle woody notes, before a traditional bottle re-fermentation completes the process.
