Barrel-aged bretted table beer fermented with Stu Mostow's own melange of wild yeast and Little Earth's house strain, harvested from apple skins.
Primary fermented in steel with an expressive Belgian yeast strain. Secondary fermentation took place in neutral oak barrels with Stu Mostow's wild yeast and Little Earth’s wild yeast mélange.
Before bottling, further blended with 10% of Stu Mostow's most acidic barrel-aged mixed fermentation saison.
